If you’re looking for a quick and healthy snack or breakfast item, my Vegan Oatmeal Chocolate Chip Muffins may just be it! With a large family we need quick, easy and healthy snack options. I stopped buying most prepackaged items and decided to focus on more homemade healthier snacks. My Vegan Oatmeal Chocolate Chip Muffins are a huge hit here at our house. This recipe yields 2 dozen muffins and I make these 2-3 times a week! You see, my kids eat A LOT! This recipe is perfect for us, as it is dairy free and egg free. We aren’t vegan but we love eating as much plant-based meals and snacks as possible.

*1 Flax Egg= 1 Tbsp ground flax-seed meal and 3 Tbsp water

  1. Combine oats, flour, sugar, baking powder, and salt in a medium size bowl (or mixer).
  2. In a separate bowl, mix the flax eggs, milk, vanilla and oil.
  3. Stir the flax egg mixture into the flour mixture.
  4. Fold in the chocolate chips.
  5. In a greased or paper-lined muffin pan, fill each 2/3 full of the batter. Bake at 350 degrees for 18-22 minutes or until toothpick comes out clean. Let cool and enjoy!
