Over this past summer I had to think quick and get real creative with feeding 5 kids. Once we began homeschooling this school year, I felt burnt out. Like, what am I going to feed everyone? Having the same thing everyday isn’t an option. I saw a friend doing platters for appetizers one day and I decided to make lunch and snack trays.

I like to offer a variety of different fruits and veggies if possible and keep it simple at the same time. I don’t have a lot of time to spend in the kitchen. My kids love making flat bread pizzas and our Pesto Veggie Flat Bread Pizzas are great. You can fill your lunch or snack tray with almost anything. Here’s a short list of some of the items I include in mine.
- Carrots
- Celery
- Apples
- Oranges
- Slice Peppers
- Popcorn
- Blue Corn Chips
- Steamed Snow Peas
- Star Fruit
- Black Bean Quesadillas
- Turkey Paninis
- Sliced pears
- Steamed Broccoli
- Vegan Oatmeal Chocolate Chip Muffins
- Peanut Butter and Jelly Sandwiches
This is also a great way to get the kids involved with preparing their own lunch or snack. My oldest enjoys helping so she will normally make the sandwiches. My two little ones like to eat everything as we make the tray. What’s even better is that it’s an easy clean up at the end. One tray to wash and that’s it.
Sometimes I’ll even add a Green smoothie or Blueberry Kale smoothie on the side. Check out my post here on the different smoothies we like for some great ideas.
